Aaaannnddd the other thing I made was: Mapo Eggplant!
This is defintely going to be my dinner this week!

ReplyDeleteI love eggplant! My friend made an eggplant casserole once, and it was delish. And my school has eggplant lasagna, it was great. I haven't had eggplant in a while.
